Chef Deni Sumarko Changes the Face of Batam Culinary with the Omakase and Carte Blanche Concept at Kez Bakery & Restaurant

Kez Bakery & Restaurant, located at Ruko Kara Junction, Jl. Ahmad Yani, Taman Baloi, Kec. Batam City, Batam City, Riau Islands, is not an ordinary restaurant. Offering a unique and interesting dining experience, this restaurant operates with the Omakase and Carte Blanche concepts.

Omakase in Carte Blanche

According to Chef Bernhart Denny Sumarko or who is familiarly called Chef Deni, Omakase is a Japanese food concept where customers are given the freedom to order food based on the chef’s recommendations.

Carte Blanche, a French term meaning “blank document,” gives chefs complete freedom to be creative with the menu, depending on the season and availability of ingredients.

Menu Served

Kez Bakery & Restaurant does not have a fixed menu, in accordance with the Carte Blanche concept it promotes. The food served varies, from 7 to 13 courses, depending on the availability of raw materials.

Starting from welcome snacks in the form of homemade bread buns with onion paste, to main courses such as USDA Prime Wagyu Beef Short Ribs cooked using the sous vide method for 72 hours, all served with an experimental touch.

Uniqueness and way of eating

This restaurant offers an intimate experience with a private dining concept, which requires advance reservations. Apart from that, Esme Private Dinning Kez Bakery & Restaurant is the only restaurant in Batam that serves fermented food.

The way of eating at this restaurant is also unique, where guests are given the freedom to eat with their hands, breaking the usual rules of formality in other fine dining restaurants.

Philosophy and Experimentation

The name “Esme” itself means “to esteem” or “to love,” which expresses the passion of Chef Deni and his team in creating dishes. They believe in experimentation, research, and development, including product aging and fermentation.

Esme or Kez Bakery & Restaurant is not just a place to eat, but a space where Chef Deni invites you to experience dishes prepared with heart. With the concept of Omakase and Carte Blanche, this restaurant offers a truly unique dining experience in Batam City.
